Okay y’all… let me start with a big I’m sorry this blog is late. Life has been lifing, the kitchen has been kitchening, and your girl has been over here trying to balance business, love, and blood sugar like a circus act. But I had to come back and tell you about this week’s little adventure in my kitchen — because it was too sweet not to share.
So, my husband… bless him.
He can’t have sweets, but that man has been craving Pop‑Tarts for months. Every time we pass the breakfast aisle he gives me that look — you know the one — like he’s imagining running away with a box of Frosted Strawberry and never looking back.
And listen… I get it. I’m a diabetic chef. I know what it feels like to want something nostalgic and sugary and fun, but also know your body will fight you like you just insulted its mama.
So for Valentine’s Day, instead of chocolates or candy, I decided to make him something better:
Low‑carb, low‑sugar, homemade Pop‑Tarts — Kati’s Flavor Lab style.
Y’all… when I tell you these came out so good?
Flaky. Warm. Just sweet enough. And made with ingredients that won’t send anybody’s glucose into outer space. It was giving childhood treat but grown‑up friendly. It was giving “I love you enough to recreate your favorite junk food from scratch.” It was giving Valentine’s Day magic.

As soon as I can sit down long enough to edit it without falling asleep mid‑clip, I’ll have it up for you. I promise it’s worth the wait.

PS. Heres the recipe 😋
Crust:
2 cups almond flour, 1/4 cup high protein greek yogurt, 1/2 cup lactate, 2 T chia seeds, Dash of vanilla
Filling
Pint of fruit, 2 T water, 2 T stevia, cooked and smashed then 2 T cornstarch slurry ( equal parts cornstarch and water mixed well and added to hot liquid to thicken)
Frosting
Equal parts stevia confectionery sugar and cornstarch and 2 T lactate
