Greek Yogurt Flatbread

I have discovered a flatbread recipe that requires only four ingredients, which I am interested in trying. I saw it on Instagram reels and thought I could adapt it for my cookbook.

First though I hid the lead so I could check to see if my old homies were still reading. We have the components to fix the water heater in the RV, and then I kind of asked to completely rearrange/reconstruction of the RV that would give us so much more space. Alex is part of a group that discusses RV renovations to assist subscribers with issues they encounter while transitioning to tiny living. He was telling me that one of his friends put a bay window in their toy hauler/back of the RV. I said if they can do that could we move the living room to the back bust down the wall and make the whole thing an open concept space with a banquette with storage in the slide out where the couch is now that converts into an office space when we need it. So as always there goes the budget! I understand that I am incurring additional expenses, but the outcome will justify the cost upon completion.

We are currently on our second attempt to repair the water heater using JB Weld. We didn’t know there was a pressure release valve on the tank, so when the air pressure that couldn’t escape it blew again. We know better so well do better. We will be testing the weld this weekend, and I will share the details on my social media platforms.

 Speaking of socials, I think TikTok might have opened my live capability, so I'm going to try to use it Thursday about lunch time, Eastern Standard Time. I'm going to retype this to post it tonight and make a video in the morning letting everyone know, so y'all can come to the garden with me. That arugula is getting off the charts again and so is the spinach.

The 4 ingredience in the flatbread are flour, baking powder, olive oil, and whipped Greek yogurt. I'm going to add spinach and chia seeds. If feasible, I would like to substitute the all-purpose flour with whole wheat or rice flour. I’m trying to use that spinach in any way that I can. I was unaware before starting this garden just how much it would produce. The plants are massive. In our defense, we provided them with fertilizer and Miracle-Gro soil to enhance their growth. I believe the significant rainfall over the past three weeks has also contributed to the situation. Anyways, whip your Greek yogurt to take the clumps out and make it easier to incorporate. I would incorporate the spinach and chia seeds into the yogurt during the whipping process. Then add to dry ingredients and knead until the dough is smooth.  The recipe suggests rolling out lightly oiled dough and baking it at 375°F for approximately 20 minutes. I intend to make a double batch, both as a whole and in 6-8 smaller portions to test their suitability for sandwiches.
