Stuffed potatoes revamped

I found this Facebook post with mushroom and feta stuffed sweet potatoes and it warmed my heart so let's recreate. Alex doesn't like the texture of mushrooms so im going to hide them in bacon. Heres my plan and a weekly update. 

 

This week my parents go on vacation so party over here, just kidding! So a splash more to do this weekend but should be fun! Hoping for some sunshine so I can sit in that finally warming pool in the back yard. I had a tomato harvest yesterday and im excited to try those. I start my promotion this week coming up so I got to go shopping for some cute new clothes. School is about half over but im behind so im doubling down to stay on track but that leaves Alex by himself even more than normal so I feel like im failing as a wife. It's rough on him not being able to work. So we're looking into online work for him to feel more like he matters. I'd probably feel the same if the roles were reversed. So we're planning a trip next month to reconnect and have some relaxation!

 

Last update and we'll get to the goods. If you were one of the almost 30 people that watched my live this evening I wanted to thank you so much for showing up. I really appreciate your support. I have no idea what to say doing those so it might sound like I ramble, but the only way to get better is to simply do it. Im thinking of lunchtime garden lives a few times a week then once I get that together im thinking of cooking lunch on live to get this little engine moving in the right direction. Im excited for the new experience this is allowing me even if im not good at it yet. 

 

Well this blog took a weird turn let's move along with the topic at hand. The stuffed potatoes turned into air fryer potatoes with steak and asparagus, that you can check out on my Facebook and Tiktok. Im still giving you my stuffed sweet potato delight though. The original recipe says you need sweet potatoes, onion, spinach, mushrooms, feta, and rosemary. Then it goes onto talk about a lemon garlic yogurt sauce, which I'll probably make for myself since Alex doesn't like yogurt. My chef since says we go a different way all together. It sounds way better if you make the sweet potato into either fries or sliced. I think you should bake them for like 20 mins in a 400 degree oven and while you wait cut up 5 straps of bacon cut them into inch squares and cook low and slow to extract the grease then im going to small diced my mushrooms and cook them in the bacon grease. Then add spinach and wilt. Strip the rosemary from the vine and chop. By this time your sweet potatoes should be done. Your looking for them to be done but not falling apart. Then just assemble how you want to. Personally I'd crumble the feta over the hot fries then add bacon mixture then the rosemary and that lemon sauce they mentioned. Lemon sauce was yogurt,.minced garlic, lemon juice and zest, and salt and pepper. 

 

It's been a wild week both at work and at home but we can always know that good healthy food can be healing in more ways than one. Cooking with Alex and gardening being peace to my tired soul. Friends please find something to do this week that brings you peace. Until next time... Be Blessed!
