Greek Taco Salad

This isn’t your average lettuce pile with a few toppings. This salad has attitude. It brings the sharpness of feta, the crunch of cucumbers, and the zing of red onion, all balanced with the warmth of the marinated chicken and crispy taco bowl to boot. The only thing I know about Greek food is it goat and lamb is prevalent in the cooking and milk, they use fresh ingredients, and everything has olive oil and lemons in it, and that is love their cucumber yogurt sauce i can never pronounce. The high school i went to the last few years was next door to a Greek orthodox church, and every year they'd have Greek fest and invite everyone from the community in to embrace their culture. It was the most fun and we looked forward to it all year. 

 

Here's the ingredients i used.

1 head romaine lettuce, chopped

1/2 cup Greek salsa

1/2 cup kalamata olives, halved optional

1/2cup crumbled feta cheese

10 inch tortilla and I used a loaf pan make the shape when it baked marinated chicken thighs with Greek yogurt, pickled pepper juice/apple cider vinegar, garlic, oregano, rosemary, olive oil, paprika, salt & pepper.

For the Greek salsa: 

1 roma tomato diced

1/2 cucumber diced

1/4 red onion diced

¼ cup olive oil

Juice of 1 lemon

1 tsp apple cider vinegar

1 garlic clove, minced

1 tsp fresh oregano

Salt & pepper to taste

 

 Meal Prep Move: Store your components separately and build when ready. The salsa keeps for up to 5 days in the fridge.

 

Make it a Wrap: Toss everything into a whole wheat pita or low-carb wrap and you've got a Greek taco on the go.

 

This recipe is everything I want in a salad—it’s quick, it’s bold, and it doesn’t feel like “diet food.” It gives diner-style satisfaction without the diner-style heaviness. It’s the kind of recipe that could easily find a home your weeknight rotation.
