Caramelized Onions and BBQ Slider

One skillet. Less cleanup. Low-fat comfort food. Big BBQ flavor.

Some weeks just feel heavier than others.

When life gets stressful, I don't always need an elaborate self-care routine. Sometimes I need to get into the kitchen, turn on some music, and make something that tastes really good—without creating a mountain of dishes afterward.

That's exactly how these Low-Fat BBQ Caramelized Onion & Provolone Sliders came about.

They're made in one skillet with lean ground beef, caramelized onions, provolone, soft potato rolls, and my homemade low-sugar BBQ sauce.

And yes, the cheese melts right in the skillet.

Put the lid on. Let it melt. Keep the dishes to a minimum.

Because when you're already stressed, who wants to clean five pans?

Cooking as Stress Relief

Cooking has always been one of my favorite ways to slow down.

There's something about having a recipe—or even just an idea—and turning it into an actual meal that helps me get out of my own head.

Slice the onions.

Listen to them sizzle.

Watch them slowly turn golden and sweet.

Season the beef.

Taste the sauce.

Build the sliders.

For a little while, you're focused on what's happening right in front of you instead of everything waiting for you outside the kitchen.

And then you get to sit down and enjoy what you made.

That's my kind of reset.

Stress relief doesn't have to be complicated. Sometimes it's simply taking a little time to do something you enjoy and giving yourself permission to slow down.

Why I Love These Sliders

These aren't meant to be another heavy comfort-food recipe.

I wanted something that gave me all the satisfaction of BBQ sliders while keeping things a little lighter.

We're using lean ground beef, a modest amount of provolone, soft potato rolls, and my low-sugar BBQ sauce.

The caramelized onions bring sweetness and depth, while the BBQ sauce adds that smoky, tangy flavor that makes you want another bite.

And the entire meal comes together in one skillet.

That's a win in my kitchen.

Low-Fat BBQ Caramelized Onion & Provolone Sliders

Ingredients

1 package soft potato rolls

1 pound lean ground beef

1–2 large yellow onions, thinly sliced

Provolone cheese slices

1 tablespoon olive oil

1 tablespoon butter

1–2 tablespoons brown sugar, optional

Salt, to taste

Black pepper, to taste

Garlic powder, to taste

BBQ seasoning, to taste

Instructions

1. Caramelize the onions.

Heat the olive oil and butter in a large skillet over medium-low heat.

Add the sliced onions and season lightly with salt.

Cook slowly, stirring occasionally, until they're soft, golden brown, and caramelized.

Don't rush this part. The slower the onions cook, the more flavor they develop.

Stir in your low-sugar BBQ sauce and allow the onions to cook for another minute or two so they soak up all that smoky flavor.

2. Cook the beef.

Push the onions to one side of the skillet.

Add the lean ground beef and season with salt, pepper, garlic powder, and BBQ seasoning.

Break the beef apart as it cooks until browned and fully cooked.

Drain any excess grease if needed.

Mix the beef and caramelized onions together and add more low-sugar BBQ sauce to taste.

3. Add the potato rolls.

Arrange the potato rolls directly over the BBQ beef and onion mixture.

Top with slices of provolone cheese.

And now comes my favorite one-pan trick.

Put the lid on.

Turn the heat down to low and cover the skillet for a few minutes.

The trapped heat melts the provolone right over the sliders without requiring another baking dish.

No oven. No extra pan. No unnecessary cleanup.

Just cover it and let that cheese get nice and melty.

4. Serve.

Once the cheese has melted, carefully separate the sliders and serve them hot.

Add an extra drizzle of low-sugar BBQ sauce if you want even more BBQ flavor.

The Best Part? Less Cleanup.

One of my biggest goals with recipes like this is making cooking feel realistic.

I love cooking, but I don't want every dinner to require a sink full of dishes.

Especially on stressful days.

That's why one-pan meals are such a lifesaver.

You get to cook something delicious, sit down, enjoy your food, and actually have an evening left afterward.

You don't have to fix everything tonight.

You don't have to have the entire week figured out.

Put on some music.

Sometimes taking care of yourself looks like the big things.
