Sometimes God, Growth & Blueberry Protein Loaf

I can remember distinct moments in my life where taking a different road would've completely changed where I ended up. Lately, I've been realizing why I made the choices I did—and maybe why I needed to.

Acting out of anger or frustration has been part of my family for generations. It's easy to react when emotions are high. Alex is always reminding me to let my heartbeat come back down before I speak because once the words are out, you can't take them back.

Now, if everyone would just act their age instead of their shoe size, life would be a whole lot easier.

He also reminds me that I can't keep worrying about what everyone thinks of me. That's a hard lesson when I literally write about my life on the internet. I share these stories because I hope they'll help someone trust me, laugh with me, cook with me, or maybe remember me when they need my services.

And while you're at it, tell me if you actually read these little life rants. Sometimes life feels completely bonkers, and writing helps me sort through it.

At the end of the day, I figure God is still working on me. Maybe that's exactly why I'm where He has me right now. Sometimes you need a little alone time, a blueberry margarita, and a reminder that growth isn't always comfortable.

We finished 8th place in our group in the 2026 Favorite Chef Competition. Was it the outcome I was hoping for? Of course not. But if you had told me a year ago that I'd be putting myself out there like this, asking for votes, sharing my story, and having complete strangers cheer me on, I would've laughed.

Every single vote, comment, share, and encouraging message meant more than you probably realize. Thank you for believing in me and supporting this crazy journey.

The funny thing is... I already found another competition I'm thinking about entering. 😂 Every one of these pushes me a little farther out of my comfort zone, introduces me to new people, and keeps getting my name out there. Win or lose, that's a victory I can build on.

Chocolate Blueberry Oatmeal Protein Loaf

We tried this oatmeal protein loaf with strawberries last week and loved it so much that I had to make it again—this time with fresh blueberries. I also made a few changes to make it a little more diabetic-friendly.

Ingredients

2½ cups old-fashioned rolled oats

¾ cup plain, unsweetened plant-based protein powder

¼ cup Splenda Brown Sugar Blend

2½ tablespoons cocoa powder

3 tablespoons sugar-free chocolate chips

½ teaspoon instant espresso granules

¼ teaspoon salt

1 cup unsweetened soy milk

1 cup plain Greek yogurt

2½ cups fresh blueberries

2 large eggs, lightly beaten

2 teaspoons vanilla extract

Directions
Preheat your oven to 350°F and grease or line a loaf pan with parchment paper.

Blend the blueberries until mostly smooth, leaving a few small chunks if you like a little texture.

In a large bowl, combine the rolled oats, protein powder, Splenda Brown Sugar Blend, cocoa powder, espresso powder, and salt.

Add the blended blueberries, soy milk, Greek yogurt, eggs, and vanilla extract. Stir until everything is well combined.

Fold in the sugar-free chocolate chips.

Pour the batter into the prepared loaf pan and spread evenly.

Bake for 45–55 minutes, or until a toothpick inserted into the center comes out mostly clean.

Let cool for 10–15 minutes before slicing.

It's chocolatey, packed with protein, and perfect for meal prep or an easy grab-and-go breakfast.
